Italian Beef Ragu

This is fantastic. As usual I was winging it with a few ingredients. I didn’t have pancetta and wasn’t driving to town to get it. I didn’t have Parmesan rind, but I had grated Parmesan.

I had a smidge of Trofietti Pasta. Divine. Splendid. Good. Yummy for my tummy.
