I tell ya what, this is fantastic. I ran across this little gem, browsing soups on Pinterest.
My tried and true stew - good comfort food for decades - has never received complaints, and has been passed down to my children. It’s per dang good.
This is a tad different.
I didn’t make it keto. Two fresh carrots, and six tiny red potatoes, quartered, were added to the mix. No turnips. I didn’t need to thicken the stew, it thickened on its own whilst baking in the oven.
I purchased stew meat, not roast.
I actually would add at least two more cups of broth or water.
I wish I had a smidge of cornbread, batter filled with jalapeños.
Oh my goodness.
