Whole Foods has a yummy salad I really enjoy. The cost, however, is $599.95 and some change…for one salad.
I exaggerate.
I purchased cute little meal prep containers, perfect for a large salad, a rotisserie chicken to keep meal prep simple, and a Vertical Harvest container of kale, arugula, and sorrel.
The chicken in the WF salad is chile chicken of some sort.
So I hit up Pinterest and play around. Since my chicken is prepared, I cut a few steps, making the recipe relatively simple.
Chili’s in adobo, tomato sauce, cumin, garlic, onion, blend.
Stir sauce into my mostly shredded chicken.
There is enough for the freezer and plenty for the next three days.
Have mercy, I just might be on to something. I’ll let you know, after lunch tomorrow.
