Good Eats

Former colleagues, Texas A&M friends (students I worked with at one time), always prepare the best meals and desserts.

I picked up groceries last night on my way home and prepared an incredible salad. I think you guys may enjoy this too:

Arugula

Prosciutto

Cherry or grape tomatoes

Grated Parmesan

Lemon Dijon dressing (The bomb, recipe on Pinterest)

I brought a few honey roasted walnut pieces to work today to toss on top, delicious.

Jill Ole Miss used a charcuterie board for her serving piece, absolutely gorgeous.

Soon I’ll be preparing Lauren A&M’s dish. Cherry or grape tomatoes in a baking dish, with a block of feta in the middle. Bake. Then add pasta and stir. OMG it looked mouthwatering delicious. I will substitute spiral veggies for pasta. I'll let you know how this turns out too. (I LOVE pasta, and so does my tush. 🥴)

I think she added a bit of Parmesan, maybe a pinch of salt and pepper. Spices to suit your taste are always yummy.
