Accidental Goodness

It’s quite possible I prepared the best dressing ever, today, and it was a fluke.

 

I didn’t have any cornbread, didn’t feel like running to town to find cornbread. Pinterest to the rescue, keto dressing. Hush, I hear jeers over the ‘net. I prepared keto cornbread, oxymoron and all. I baked biscuits, per my normal dressing recipe, to incorporate with (keto) cornbread.

 

There is absolutely nothing healthy about this dish by the time I’m finished with it.

 

When number one son was in kindergarten, he had the best teacher. She asked each mom to prepare a dish for the kids’ Thanksgiving celebration at school. Dishes were consistent, as she passed out Methodist Church Harvest Dinner recipes. And I want to tell you, Methodist know how to prepare a feast. I wasn’t a bad dressing maker to begin with, always kept it moist, not a lot of sage. Ms. Kinder teacher (former home ec teacher, explains a lot) took my skills to a whole ‘nother level.

 

The key, in my opinion, is sautéing onions and celery in butter, prior to adding them to crumbled cornbread and biscuits.

 

Anyway, I prayed over this mess, keto cornbread, and did my thing. I’d not prepared dressing in several years, and the last time I wasn’t completely happy with my results. But this year, even being a Covid fatty, I wanted dressing. So, I went to work baking.

 

Oh my goodness, this is unbelievably good. Maggie even wanted a bite. She couldn’t have a bite, but she wanted it, badly.

 

My son, number one, always wanted an extra pan just for him. And I obliged. He never asked for much, so when he made a request, mama made sure he had his pan of dressing. You guys would love him. I made a thousand and one mistakes raising my kids, but I did a hell of a lot of good, too. His heart is golden, he’s a darn good public servant, paramedic in the Houston area. And it is my personal belief he’s brilliant. No, I’m not biased, it’s just a fact.

 

Anyway, I believe he would approve, even though this is faux cornbread, the new accidental dressing recipe.

 

I found a new love last year, by accident, at Albertsons. The deli makes a fantastic cranberry dish, just a bit of citrus. It is divine. I’ve never been a big cranberry person, a tad does me, but I have a hard time not using this dish like Gump used shrimp...cranberry biscuits, eggs and cranberry, cranberry on a spoon, cranberry and dressing. It’s good I tell ya.

 

So, tomorrow rotisserie chicken and dressing, with cranberry relish awaits me after work, along with my schnauzer and kitty.

 

I’ve been invited to a family’s lovely Thanksgiving celebration, one of my favorite, smart, resourceful, fair-minded, advocate for those who need an advocate, new friends, whose heart is also golden. That’s just the kind of people I’m grateful to have in my life this Thanksgiving.

 

God has been good to me in Wyoming.

 

I’m so very blessed.

 

Remember, with election turmoil, Covid, and all sorts of uncertainty, God is faithful, always.
