Seldom baking these days, or even cooking much, for that matter, browsing food blogs motivates me to get back in the kitchen.
Did you know almost every kitchen gadget can be purchased 'mini'? I ran across Cooking for Two, a lovely site providing portions for two people, recipes adjusted. This is perfect for me. I can enjoy one for dinner, and save a serving for work lunch, no food waste. (Really though, Maggie tells me, with me in the house there should never be waste. Yeah, well Maggie, some things just aren't healthy for pups.)
Gorgeous mini stand mixers are plentiful, to be found in fabulous colors. Mini Instant Pots, who knew, are all over Amazon. (I've hesitated hopping on the IP bandwagon, and I'm now reconsidering because of time considerations. Would I prepare more meals if I didn't need to wait 6-8 hours for my pork loin? Hmm, let me think.) Mini cake pans, cake stands, quiche bakeware, springform pans, loaf pans, if you can think it, you can probably find it online.
And of course, Kelly Tan Peterson motivated me to prepare Keto Asian.
Mini makes me happy.
I'll let you know just how motivated I become...or not.
